Single mama, academically gifted home-schooled high school child, and full-time business owner… equals I NEED UNLIMITED ENERGY ALL DAY!
I was up later than usual last night, working on a few projects when I was inconveniently slapped with… TIREDNESS. Oh man, I don’t have the time or luxury for something like that. And because I don’t do coffee or energy drinks, I immediately searched for a list of energy boosting foods and was pleased to that find my favorites: almonds, quinoa, dark chocolate, and bananas were among the winners!
Get the heck out… those ingredients just happened to currently live under my roof! #YAYME!!! So I quickly threw them all together to make myself a dark chocolate quinoa power-bowl! Not only is it yummy and healthy, but it seriously charged me up! I had enough steady energy to keep going until I was finished with all my work. If you need that extra energy boost, give this a shot… I highly recommend it!
Ingredients:
1 cup uncooked white quinoa
2 cups almond milk
2 Tbsp unsweetened cocoa powder
3 Tbsp dark brown sugar
Dark chocolate, roughly chopped
Sliced bananas and blueberries for topping (optional)
Instructions:
- Thoroughly rinse quinoa in a fine mesh strainer.
- Heat almond milk in sauce pan over high heat and add quinoa. Bring to a boil then reduce heat, cover, and simmer for 15 minutes, stirring occasionally.
- Once liquid is absorbed and quinoa is tender, remove from heat and add cocoa powder and dark brown sugar. Stir to combine.
- Serve each bowl of quinoa with chopped dark chocolate and berries. Of course, you’re free to top it off with whatever you choose… nuts, coconut chips, apple slices, you create it!
