Can I just tell you… it’s 100°F here in Vegas. Lol… Oh, but fortunately for us, it’s DRY heat!!! Srsly, this is what a turkey cookin’ in the oven must feel like – the poor thing. This is also the time of year when I stock up on heavy-duty ultra moisturizing lotions and lip balm to prevent human crispiness! (I lie… gotta moisturize every day, all year if you don’t wanna resemble a corn flake!)
Anyway, summer awakens my crazy cravings for ice cream (Ok, I lie again… I crave for frozen treats all year long…) and the urge to grill EVERYTHING. And you know what’s really fun to grill? FRUIT! Pineapple, peaches, strawberries, bananas… even grapefruit! So my teen and I decided to make Grilled Peaches with Vanilla Ice Cream and homemade Caramel Sauce!
Easy to make and insanely DELISH… give it a shot!
Ingredients:
4 ripe peaches, halved and pitted
Vegetable oil
vanilla ice cream
For Caramel Sauce:
1 packed cup brown sugar
1/2 cup half & half
4 tbs butter
Pinch salt
1 tbs vanilla extract
Instructions:
- Heat grill to high.
- Cut peaches along seam all the way around and twist halves off the pit.
- Brush peaches with oil and cook, cut side down until fruit has grill marks, 3 to 4 minutes.
- To make the caramel sauce: Mix brown sugar, half-and-half, butter and salt in saucepan over medium-low heat. Cook while whisking gently for 5 to 7 minutes, until thick. Add vanilla and cook another minute.
- Serve peaches with vanilla ice cream drizzled with caramel sauce.
