For those of you who didn’t know already, I’m half Japanese and half Filipina (from the Philippines)… so when I announced on my personal Facebook page some time ago, that “I’ve never had Spam, Eggs, and Rice” I received numerous: “WHAT?!” “Gasp!” and “You call yourself Filipino?”
I mean, seriously… SPAM? It’s a pink, meat product in a… can. WTFreak?
Rewind a few days… JRoc and I were grocery shopping when my most intelligent child spotted a can of… wait for it… SPAM… with… wait for it… BACON. “Can we try this, Mommy?”
Long story short, I caved. The fact that it was SPAM “with Real HORMEL bacon” kinda helped him win his case too…
Anyway, I was feeling slow-mo this morning, so I figured I’d slice up the mysterious pink meat (with REAL bacon!!), cook in a skillet until it’s no longer that gross pink (don’t add anything… like oil or butter…), fry up some eggs, and serve them with fresh cooked white rice…
It was pretty good! Gonna add this to my “stuff to make when you’re feeling too tired or lazy to cook REAL food… ” haha.
