Happy Independence Day to my fellow US Foodies… and a wonderful July 4th to you all!
We begin our celebration of Freedom with a semi-Filipino breakfast (that’s sounds funny to me in several levels… lol)… fried eggs, rice, and TOCINO… Mmmmmmmm!!
The “Filipino Breakfast” would normally be served with garlic fried rice, but… here’s where the “semi” fits in… I prefer plane, jane, steamed white rice. I’m 1/2 Japanese… white rice nation (^.^).
Anyway… if you’re not familiar with “tocino”, it’s sweet pork that’s traditionally served for breakfast in the Philippines. Soooo good! And yep, it’s supposed to be a bit on the charred side… best way to have it!
Side note: I was a pesco-vegetarian (consume fish and dairy… but, no birdies, piggies, cows, etc) for about 15 years. I began eating beef again about 2.5 years ago… couldn’t do the piggies or birdies yet. Still can’t do much of either now… except bacon and tocino. Especially TOCINO!!
Anyway, a Filipino breakfast (well, any of my 6 meals throughout the day) isn’t complete without dessert… and this morning we rewarded ourselves (for being gosh-darn awesome) with ube ice cream topped with crushed Special K Vanilla Almond Cereal…
